Flax seed mustard chicken with asparagus

flax seed mustard chicken

Ingredients:
1lb skinless boneless chicken breast
1/4 cup ground flax seed
1/4 cup oat bran
1/2 cup yellow mustard or lite honey mustard dressing
1 tps salt
1 tps pepper
1 tps garlic powder
Bundle of asparagus
1 TBS orange marmalade
1 TBS of Bragg’s liquid amino or lite soy sauce
1 TBS of olive or grape seed oil

Directions:
1. Pour mustard in a pan or glass dish
2. Mix oat bran, flax seed, salt, pepper and garlic powder in separate dish
3. Dip both sides of each chicken breast in mustard
4. Then dip chicken in oat/flax mixture until covered both sides
5. Lay on a baking sheet
6. Bake chicken at 350 degrees for 30-35 min or until cooked through
7. In a pan heat oil until hot
8. Add asparagus and liquid amino or soy sauce and turn down heat to medium high
9. Sautee asparagus for 3-5 min then add the orange marmalade
10. Cook for another few minutes until asparagus is tender

Can also serve with brown rice or quinoa
