Coconut chicken with broccoli

This was so amazing, I wanted to lick my plate clean. It is a must add dish to your rotation.

Ingredients:
1.5lbs skinless chicken breast sliced into strips
Bundle of broccoli cut
1/2 cup coconut milk
1/4 onion finely chopped
2 TBS of grape seed or olive oil
1 TBS of garlic powder
1 TBS of curry powder
1 tps of sea salt
1/4 tps of black pepper
Optional coconut flakes

Directions:
1. Sautee onions in the until slightly brown and remove from pan
2. Cook chicken with sea salt and garlic powder at medium high until almost cooked through
3. Add broccoli and onions and saute for 2-3 additional minutes
4. Then add coconut milk and curry powder and lower heat for another 5 minutes
5. Optional top plate with coconut flakes

Healthy frosty

skinny shake

Here is another healthy dessert to try when you are craving something sweet like ice cream or a shake. Enjoy!

Ingredients:
3/4 cup Almond Milk
12-15 ice cubes
1/2 tsp pure vanilla extract
1-2 TBSP unsweetened cocoa powder or chocolate PB2 (powdered peanut butter)
1/3 of a Banana

Then just blend it all together

HIIT on the treadmill
1 min sprint, 1 min jog
10 rounds

3 rounds of 10-12 reps
Decline push-ups
Single arm row
Close grip pull-ups
Bent over flys

Tricep extension on cable
Diamond push-up
Skull crushers
High plank to low plank

Mexican chicken recipe

Chicken stuff

Super quick and easy Mexican flavored chicken stuff dish. Recipe thanks to my friend, Becky. Enjoy!

Ingredients:
1 1/2lb boneless skinless chicken breast
1 can of corn, drained
1 can of black beans, drained and rinsed
1/2 to full box of frozen spinach
1 red tomato diced
1/4 onion finely diced
4 TBS of chili powder
2 TBS of cumin
1 TBS of garlic powder
1 tps of red pepper flakes
Optional 1 cup of mexican shredded cheese

Directions:
1. Bake chicken breast at 375 for 25-30 min or boil and dice into cubes
2. Microwave or boil frozen spinach per directions
3. Heat oil in large pan until super hot
4. Sauté onion in oil for 1-2 min
5. Add corn, spinach, black beans, tomatoes and chicken
6. Turn down heat to medium low and add spices and mix well
7. Add optional cheese and mix/cook for another 5 min

Makes a big batch so perfect for left overs or you can freeze half for another meal.

Workout of the day

Today’s workout challenge:Instead of resting after each set of reps do 15-30 sec of cardio such as jumping jacks, jump rope, running in place, jump lunges, burpees, star jumps. You get in both your cardio and weight workout in less than an hour. Rock it!

#1
Dumb bell chest press
15, 12, 8, then another 8 reps with a lighter weight
(Tip: try to increase weight each time and 8 reps should be your max heavy weight)

#2
Inclined chest press
Chest flys
15, 12, 8 reps

#3
Dumbbell pullover
Inclined push-ups on bench or chair
15, 12, 8 reps

#4
Low plank touch right hip to the floor then left hip to the floor repeat
Scissors for abs (lay on back legs straight out low and scissor moves)
30 sec each for 2 rounds
